Peanut Butter & Salted Caramel Protein Balls
1 cup coconut flour
1 cup desiccated coconut + extra for coating
1 cup caramel/vanilla flavoured protein powder
½ cup pitted dates
¼ cup honey
1 ½ teaspoon Himalayan salt
½ cup hot water
Soak dates in a boiling water for at least 10 minutes.Drain the water, and then puree using the back of a spoon.
In a food processor, combine all the dry ingredients.
Now add the date puree, honey and hot water and blend until a doughy consistency.
Roll into balls and then roll into the coconut to coat
Makes 18 balls
