Peanut Butter & Salted Caramel Protein Balls


Ingredients:

  • 1 cup coconut flour

  • 1 cup desiccated coconut + extra for coating

  • 1 cup caramel/vanilla flavoured protein powder

  • ½ cup pitted dates

  • ¼ cup honey

  • 1 ½ teaspoon Himalayan salt

  • ½ cup hot water

Method:

  1. Soak dates in a boiling water for at least 10 minutes.Drain the water, and then puree using the back of a spoon.

  2. In a food processor, combine all the dry ingredients.

  3. Now add the date puree, honey and hot water and blend until a doughy consistency.

  4. Roll into balls and then roll into the coconut to coat

Makes 18 balls
